Part of what makes Gyokuro so special is that the tea bushes are shaded for around three weeks prior to harvest. By covering the plants, the process of photosynthesis slows down, increasing the amount of chlorophyll and amino acids in each leaf. After harvesting, the leaves are steamed to prevent oxidation, which strips flavor and color if left unchecked. The careful tea plant management leading up to and after harvest creates the sweet flavor and emerald green color Gyokuro is known for.
